Sautéed Spinach with Fried Egg

Equipment

  • 1 cast iron skillet
  • 1 garlic press

Ingredients
  

  • 1 tbsp olive oil extra virgin
  • ¼ cup diced white onion
  • 1 tsp minced garlic
  • 4 cups fresh organic spinach
  • ½ tsp sea salt
  • ¼ tsp fresh ground pepper
  • 2 organic eggs

Instructions
 

  • In a cast iron skillet, heat olive oil over medium heat.  Add onions and cook until transparent, about 5 minutes. Add garlic and continue to cook for 1 minute.
  • Add spinach and season with salt and pepper.  Cook until there is not water in pan.Move spinach to one side of pan and add cracked eggs to opposite side.  Cook egg for 5 minutes.  
  • Move spinach to plate and add egg to center.  Finish with sea salt and pepper 
  • Serve immediately.
